I havn't heard all that many soundtracks, but from what I have heard I quite enjoy the Trigun soundtrack, Tsueno Imahori did a really good job with all the tracks, Fools Paradise is currently my favourite song, my girlfriend likes Not an Angel, makes her cry. Happy cry, not sad cry.

Full Metal Alchemist, definitely. I love all the songs, especially the orchestral ones. They're all performed so nicely... plus, a nice inspiration for me, since I play the violin and listening to the FMA OST inspires me to actually practise once in awhile. XD

I love the Serial Experiments Lain soundtracks (Specially CiBERIA MiX). I also listen very often to the GITS:SAC OST's.
Moving to rock, BECK and FLCL soundtracks were awesome.

And in overall, Rurouni Kenshin takes the grand prize. All the backgrounds, op's and ed's and everything else, were simply stunning, I still recall the anime's most crucial moments when i listen to it.

I took quite a few albums of anime songs off my mp3 player due to space recently - partly because I was shuffling onto random strange songs which were either a tad boring or just strange; however I've kept some songs on. The Serial Experiments Lain music is quite cool; and I quite like the opening and closing for bleach, love hina, azu and cowboy bebop.
Though the FF7 soundtrack is immense, despite it technically not being an 'anime soundtrack'.

I think that the goddess of anime soundtracks is Yoko Kanno (Cowboy Bebop, GITS: Stand alone complex) She's done other but I can't think of them off the top of my head. from Jazz to hip-hop, she is the best. She has done work with people from the Us to Russia to Japan.

Haibane Renmei: Ethereal, to say the least. Pretty much the only soundtrack where I liked every song played on it, and because of which, I wish that Kou Otani had more masterpieces like this. Hearing the OP Free Bird always gets me nostalgic, and despite the hatred for the cat-like voices on the ED Blue Flow, I think it one of my favorite EDs.
