well, every fan should see inuyasha, yu yu hakusho, chrono crusade, fruits basket, bleach and fullmetal alchemist. and maybe full metal panic, those r all great series, and of course i have MANY more recomendations, but those all depend on what genre u like

If you like Mars, then you will probably like the Kare Kano manga. Their both shojo and sometimes get pretty dark.

Yu Yu Hakusho, Fruits Basket, and Fullmetal Alchemist are three series that I have recommended to friends who weren't into anime before but have gotten into it since watching one of them. Depending on the person, these are great choices to start with.
